Summertime Lemon Bars

To kick off our blog, we wanted to share a recipe that could be enjoyed immediately. Since its July, we wanted to celebrate summertime and backyard BBQs! What’s better than a hot day and cooling off with a cold sweet. One of our all time favorites and under appreciated, if you ask D, is the classic Lemon Bar. Chocolate is overdone, surprise your friends and family with this gluten free burst of flavor! Try the recipe and let us know what you think!

FOR THE CRUST:

  • ⅓ cup butter

  • ¼ cup of sugar

  • 1 cup of GF Flour Blend

  • 4 tablespoon heavy cream

FOR THE LEMON LAYER:

  • 2 eggs

  • ¾ cup sugar

  • 1/4 cup of GF Flour Blend

  • 2 teaspoon fresh lemon zest

  • 3 tablespoon natural lemon juice

  • ¼ teaspoon baking powder

INSTRUCTIONS

  1. Preheat oven to 350. Use parchment paper to line an 8x8

  2. For the Crust, in a mixing bowl, use room temperature soften butter. Add ¼ cup of the sugar and mix till combined. Add 1 cup of flour, and heavy cream, and beat till crumbly. Press the flour mixture into the bottom of the pan. Bake in the oven for 18-20 minutes or just till golden brown. Press the flour mixer down good, we use a flattening device.

  3. For the Lemon Layer: In a mixing bowl, combine eggs, the remaining ¾ cup sugar, flour, lemon zest, lemon juice and baking powder. Mix well, then pour over the baked crust.

  4. Bake an additional 15-20 minutes, or until light brown and the center is set. Allow the Lemon Bars to cool

  5. Refrigerate minimally of 1 hour

  6. Recommended but not optional, sprinkle confection sugar on top. It gives it a great presentation and who doesn’t love more sugar!

  7. Store in the refrigerator, not room temp.
