Homemade Gluten Free Fettuccine Pasta

Have you been looking for an easy recipe to feed the family? Maybe you have an intimate dinner planned? Whatever the occasion, this recipe is sure to impress. You will not need a pasta maker for this recipe.

INGREDIENTS

2 1/3 cups: gluten-free flour (GF Classical Blend)

2 tsp: xanthan gum

1 tsp: kosher salt

5: large eggs

DIRECTIONS

  1. In a large bowl, whisk your dry ingredients together.

  2. Make a large crater in the center of your mixture and add your eggs. Using a fork, beat eggs until mixed, then slowly integrate flour into eggs until no dry flour is left and a ball of dough has formed.

  3. Knead dough on a lightly floured surface until smooth.

  4. Cut dough into quarters and wrap all but one in plastic wrap. On a lightly floured surface, use a rolling pin on the unwrapped dough. Make it into a long rectangle, 1 to 2 cm thick.

  5. Place rolled out dough onto a lightly floured surface and dust with more flour. Repeat process with remaining dough quarters.

  6. Slice dough in long equally sized rectangular strips. Curl pasta strips into nests. Place on a parchment lined baking sheet and cover with a clean kitchen towel until ready to cook.

  7. To cook: bring a large pot of salted water to a boil and add pasta. Boil, stirring gently with a wooden spoon, until tender, 2 to 3 minutes.

  8. Drain and serve with your favorite pasta sauce & bottle of wine.
